Vegetable Noodle Stir-Fry: Japanese Style

Ingredients:

  • 8 oz udon noodles
  • 1 block tofu, cubed
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tbsp vegetable oil
  • Sesame seeds and green onions for garnish

Instructions:

  1. Cook udon noodles according to package instructions. Drain and set aside.
  2. In a large pan, heat vegetable oil over medium heat. Add tofu cubes and cook until browned on all sides. Remove from pan and set aside.
  3. In the same pan, add sesame oil and garlic. Cook until fragrant, about 1 minute.
  4. Add bell pepper, zucchini, carrot, and broccoli to the pan. Cook until vegetables are slightly tender, about 5-7 minutes.
  5. Stir in soy sauce and mirin, then add cooked udon noodles and tofu back to the pan. Toss everything together until well combined.
  6. Cook for an additional 2-3 minutes, allowing flavors to meld together.
  7. Remove from heat and garnish with sesame seeds and green onions.
