Spicy Pork Bone Soup: Deep, Flavored Korean Comfort

Spicy Pork Bone Soup, also known as Gamjatang, is a traditional Korean dish that is bursting with bold flavors and comforting warmth. This rich and spicy soup is made by simmering pork bones and vegetables in a flavorful broth until tender and aromatic.

The ingredients you’ll need:

  • 4 lbs pork neck bones
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 tbsp gochugaru (Korean red pepper flakes)
  • 2 tbsp gochujang (Korean red pepper paste)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sesame oil
  • 6 cups water
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions:

  1. In a large pot, add the pork bones and enough water to cover them. Bring to a boil and cook for 10 minutes, then drain and rinse the bones under cold water to remove any impurities.
  2. Return the bones to the pot and add chopped onion, minced garlic, grated ginger, gochugaru, gochujang, soy sauce, fish sauce, sesame oil, and water. Bring to a boil, then reduce heat to low and simmer for 2-3 hours, until the meat is fall-off-the-bone tender.
  3. Season with salt and pepper to taste. Garnish with chopped green onions and sesame seeds before serving.

Spicy Pork Bone Soup is typically served hot and steaming, with a side of rice and banchan (Korean side dishes) for a complete and satisfying meal. The broth is rich and fragrant, with a spicy kick from the red pepper paste and flakes.

So next time you’re craving some deep, flavorful comfort food, give Spicy Pork Bone Soup a try. It’s sure to warm you up from the inside out and leave you feeling satisfied and content.
