  • 8 oz rice vermicelli noodles

  • 8 oz extra firm tofu, cubed

  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup roasted peanuts, chopped

For the Spicy Dipping Sauce:

  • 2 cloves garlic, minced
  • 2 bird’s eye chilies, chopped (adjust to taste)
  • 1/4 cup fish sauce
  • 1/4 cup lime juice
  • 2 tbsp sugar
  • 1/4 cup water

Instructions:

To start, cook the rice vermicelli noodles according to the package instructions. Once cooked, drain them and rinse with cold water. Set aside.

Next, prepare the shrimp by seasoning them with salt and pepper. Heat a pan over medium-high heat and cook the shrimp until they are pink and opaque, about 2-3 minutes per side. Remove from heat and set aside.

In the same pan, add the tofu cubes and cook until they are golden brown and crispy on all sides. Remove from heat and set aside.

To make the Spicy Dipping Sauce, mix the garlic, bird’s eye chilies, fish sauce, lime juice, sugar, and water in a bowl. Stir well until the sugar is dissolved.

In a large mixing bowl, combine the cooked rice vermicelli noodles, shrimp, tofu, cucumber, carrot, red bell pepper, mint leaves, and cilantro leaves. Toss everything together until well combined.
