Rice Noodle Salad with Pork, Tofu, Veggies & Tangy Lime: Bun Pork Tofu Veg Tangy

Ingredients:

  • 8 oz rice noodles
  • 1/2 lb pork, sliced thinly
  • 1/2 block firm tofu, cubed
  • 1 cup mixed veggies (carrots, cucumber, bell peppers)
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint
  • 1/4 cup roasted peanuts, crushed

Instructions:

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a large pan, cook pork slices until browned. Remove from pan and set aside.
  3. In the same pan, add tofu cubes and cook until golden brown on all sides. Remove from pan and set aside.
  4. In a large bowl, combine cooked noodles, pork, tofu, mixed veggies, cilantro, and mint.
  5. In a small bowl, mix together the dressing ingredients (such as lime juice, soy sauce, honey, and sesame oil).
  6. Pour the dressing over the noodle salad and toss to combine. Top with crushed peanuts.
