Ingredients:
- 1 lb pork loin, cut into cubes
- 1 cup pineapple chunks
- 1 bell pepper, sliced
- 1 onion, diced
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1/4 cup water
Instructions:
- In a small bowl, mix together ketchup, rice vinegar, brown sugar, and soy sauce to make the sweet and sour sauce.
- In a separate bowl, mix together cornstarch and water to make a slurry.
- Heat a large skillet over medium-high heat and add the pork cubes. Cook until browned on all sides.
- Add the pineapple, bell pepper, and onion to the skillet with the pork.
- Pour the sweet and sour sauce over the pork and veggies, stirring to coat.
- Add the cornstarch slurry to the skillet and mix well to thicken the sauce.
- Cook for an additional 2-3 minutes, until the sauce is thickened and everything is heated through.
- Serve the sweet and sour pork over rice and enjoy!
