Authentic Tofu and Vegetable Stir-Fry: Vegan-Friendly Recipe

Ingredients:

  • 1 block of firm tofu, drained and cubed
  • 2 cups of mixed vegetables (such as bell peppers, broccoli, carrots, and snow peas)
  • 1 tablespoon of sesame oil
  • 3 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of maple syrup
  • 1 teaspoon of cornstarch
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. In a large skillet or wok, heat the sesame oil over medium heat. Add the cubed tofu and cook until golden brown on all sides. Remove from the skillet and set aside.
  2. In the same skillet, add more sesame oil if needed and sauté the garlic and ginger until fragrant. Add the mixed vegetables and cook until they are tender but still crisp.
  3. In a small bowl, mix together the soy sauce, rice vinegar, maple syrup, and cornstarch. Pour the sauce over the vegetables and tofu, stirring to coat evenly. Cook for another 2-3 minutes until the sauce has thickened.
  4. Season with salt and pepper to taste. Serve the stir-fry hot, garnished with sesame seeds.
