Ingredients:
- 8 oz rice noodles
- 1/2 lb shrimp, peeled and deveined
- 1/2 lb pork, thinly sliced
- 1 cup mixed veggies (carrots, bell peppers, cucumber)
- 1/4 cup fresh herbs (cilantro, mint, basil)
- 1/4 cup peanuts, crushed
- 1/4 cup fish sauce
- 2 tbsp soy sauce
- 2 tbsp lime juice
- 1 tbsp sugar
- 2 cloves garlic, minced
- 1 red chili, sliced
Instructions:
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large skillet, cook shrimp and pork until fully cooked. Remove from heat and let cool.
- In a large bowl, combine cooked rice noodles, shrimp, pork, mixed veggies, fresh herbs, and crushed peanuts.
- In a small bowl, whisk together fish sauce, soy sauce, lime juice, sugar, garlic, and chili. Pour over the noodle mixture and toss to combine.
- Serve the rice noodle salad chilled or at room temperature. Enjoy!
