Rice Noodle Salad with Shrimp, Pork, Mixed Veggies & Fresh Herbs: Bun Shrimp Pork Mixed Fresh

Ingredients:

  • 8 oz rice noodles
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb pork, thinly sliced
  • 1 cup mixed veggies (carrots, bell peppers, cucumber)
  • 1/4 cup fresh herbs (cilantro, mint, basil)
  • 1/4 cup peanuts, crushed
  • 1/4 cup fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1 red chili, sliced

Instructions:

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, cook shrimp and pork until fully cooked. Remove from heat and let cool.
  3. In a large bowl, combine cooked rice noodles, shrimp, pork, mixed veggies, fresh herbs, and crushed peanuts.
  4. In a small bowl, whisk together fish sauce, soy sauce, lime juice, sugar, garlic, and chili. Pour over the noodle mixture and toss to combine.
  5. Serve the rice noodle salad chilled or at room temperature. Enjoy!
