Cold Soba Noodles: Refreshing Summer Recipe

There’s nothing quite like a refreshing, cold dish on a hot summer day. One of my favorite go-to recipes for beating the heat is cold soba noodles. These thin and chewy Japanese noodles are not only delicious but also incredibly easy to prepare. Here’s how you can make your own batch of cold soba noodles to enjoy during those scorching summer days.

Ingredients:

  • 8 ounces of soba noodles
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 clove of garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 cup cucumber, julienned
  • 1/2 cup carrot, julienned
  • 2 tablespoons green onions, chopped
  • Sesame seeds for garnish

Instructions:

  1. Cook the soba noodles according to the package instructions. Drain and rinse the noodles under cold water until they are cool to the touch.
  2. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger to make the dressing.
  3. Toss the cold noodles with the dressing until they are well coated.
  4. Add the julienned cucumber, carrot, and chopped green onions to the noodles and toss to combine.
  5. Chill the soba noodles in the refrigerator for at least 30 minutes before serving.
