Instructions

To start, cook the rice noodles according to the package instructions. Drain and rinse with cold water, then set aside.

Next, season the chicken breasts with salt and pepper, then grill or cook in a skillet until cooked through. Let the chicken rest for a few minutes before slicing it thinly.

In a large mixing bowl, combine the cooked rice noodles, shredded carrots, julienned cucumber, chopped basil, chopped mint, chopped peanuts, and sliced green onions.
