Bun Ga Nuong

Ingredients:

  • 1 lb boneless, skinless chicken thighs

  • 1 tbsp sugar
  • 1/2 tsp black pepper
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 cup fresh herbs (cilantro, mint, Thai basil)
  • 8 oz rice vermicelli noodles
  • 1/4 cup roasted peanuts, crushed
  • 1/4 cup crispy fried shallots
  • Lime wedges

Instructions:

  1. In a bowl, combine lemongrass, garlic, soy sauce, fish sauce, sugar, and black pepper. Add the chicken thighs and coat them with the marinade. Let marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat. Grill the chicken thighs for 4-5 minutes per side, or until fully cooked. Let rest for a few minutes, then slice into thin strips.
  3. Meanwhile, cook the rice vermicelli noodles according to package instructions. Rinse with cold water and drain well.
