Stir-Fried Tofu with Veggies: A Quick Korean Meal

Are you in the mood for a tasty and healthy Korean dish but don’t have a lot of time to spend in the kitchen? Look no further! This Stir-Fried Tofu with Veggies recipe is perfect for those busy nights when you need a quick and satisfying meal. Packed with flavor and nutrients, this dish will become a staple in your weekly meal rotation.

Ingredients:

  • 1 block of firm tofu, pressed and cut into cubes
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 tablespoon of gochujang (Korean chili paste)
  • 1 tablespoon of honey
  • 1 clove of garlic, minced
  • 1 teaspoon of grated ginger
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 carrot, sliced
  • 1 cup of snow peas
  • Cooked rice, for serving
  • Sesame seeds and green onions, for garnish

Instructions:

  1. In a bowl, mix together the soy sauce, sesame oil, gochujang, honey, garlic, and ginger. Set aside.
  2. In a large skillet or wok, heat some oil over medium-high heat. Add the tofu cubes and cook until they are golden brown on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add more oil if needed and sauté the bell peppers, onion, carrot, and snow peas until they are tender-crisp.
  4. Add the tofu back to the skillet and pour the sauce over the tofu and veggies. Stir well to coat everything in the sauce.
  5. Cook for another 2-3 minutes, allowing the flavors to meld together.
  6. Serve the Stir-Fried Tofu with Veggies over cooked rice and garnish with sesame seeds and green onions.
