Soft Tofu Stew: A Simple Soonu Jjigae Recipe

Soft tofu stew, also known as soonu jjigae, is a traditional Korean dish that is perfect for warming up on a cold day. This simple recipe is easy to make and full of flavor. Here’s how you can make your own soft tofu stew at home:

Ingredients:

  • 1 block of soft tofu
  • 1 zucchini, sliced
  • 1/2 onion, sliced
  • 1/4 cup of kimchi
  • 2 cloves of garlic, minced
  • 1 green onion, chopped
  • 1/2 cup of vegetable broth
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste

Instructions:

  1. Start by preparing your ingredients. Slice the zucchini, onion, and green onion, and mince the garlic.
  2. In a pot, add the vegetable broth and bring it to a simmer.
  3. Add the sliced onion and garlic to the pot and cook until they are softened.
  4. Next, add the zucchini and kimchi to the pot and cook for a few minutes.
  5. Slowly add the soft tofu to the pot, being careful not to break it apart.
  6. Season the stew with soy sauce, sesame oil, salt, and pepper.
  7. Simmer the stew for about 10 minutes, allowing the flavors to meld together.
