Ingredients:
- 8 oz rice noodles
- 1/2 lb pork, sliced thinly
- 1/2 block firm tofu, cubed
- 1 cup mixed veggies (carrots, cucumber, bell peppers)
- 1/4 cup chopped cilantro
- 1/4 cup chopped mint
- 1/4 cup roasted peanuts, crushed
Instructions:
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large pan, cook pork slices until browned. Remove from pan and set aside.
- In the same pan, add tofu cubes and cook until golden brown on all sides. Remove from pan and set aside.
- In a large bowl, combine cooked noodles, pork, tofu, mixed veggies, cilantro, and mint.
- In a small bowl, mix together the dressing ingredients (such as lime juice, soy sauce, honey, and sesame oil).
- Pour the dressing over the noodle salad and toss to combine. Top with crushed peanuts.
